Whenever possible, it's nice to visit a dining establishment at least twice before writing about it. Not only does it mitigate the risk that maybe the cook was having an off day or the server was new, but also highlights the consistency and/or progression of the experience. This was our second visit to Sult Pierogi Bar.
We arrived during happy hour. Three pierogis for three bucks with sour cream thrown in for good measure. With a diverse selection of different pierogis on the menu we had a tough time deciding. As we studied the menu I ordered a beer (Electric Unicorn from Phillips brewing, one of my faves), which arrived cold, in a can. Sult has a well stocked bar and a fairly eclectic cocktail menu, and Whiskey (somewhat surprisingly to me) ordered up a Manhattan. As we sipped drinks we managed to settle on four varieties and and added a sausage for accompaniment.
Sult's atmosphere is modern, industrial, and a bit dark, with heavy wooden tables, fresh art and a long bar lining the innermost length of the open eating area. A few large tables create a dining room conducive to pigging out or hanging out and having a bite and drinks with a large groups of friends.
I ordered the daily special pierogis, dubbed "The Med" witch were donair inspired and a trio of "BD-CB", a bacon double cheeseburger variety. Both kinds were simply delicious, comfort food in the best possible way, although the spin on these classics was novel, it was not in a gimmicky way, they had the feel of lovingly made food from a grandmother's kitchen. Whiskey and I split a rather large sausage which was named "Rogue 101", a pork-bacon-cheese-onion creation which was savoury and packed with flavour.
Aside from simple pierogis and sausages, the menu includes concoctions which include pierogis such as pierogi nachos, pierogi poutine (I tried these on our last visit, and I was blown away, hence the second visit), pierogi lasagna, pierogi salad.... the list goes on. There are a few sides and other items all of which are obviously carefully chosen to go with the theme and nothing on the menu feels out of place.
Having wolfed down our small afternoon snack, we set out downtown Victoria on a cool winter day to plan our next meal satisfied, with warm bellies and smiles on our faces.
Cheers, and bon appetit.

9/10 (Our server seemed a tad flustered on the second visit and I might have liked a glass with my beer, but overall this experience was really great and the price point is wonderful for the budget minded, half a dozen pierogis and a drink for just over $10 makes a wonderful pitstop snack while roaming around downtown Victoria).
